Description
Allspice (Pimenta dioica) belongs to the Myrtaceae family and is closely related to cloves, eucalyptus, guava, and bay rum tree. Allspice is the only spice grown exclusively in the Western Hemisphere and is native to southern Mexico, Central America and the West Indies. It is believed that allspice was first used by the ancient Mayans and Aztecs, who used the pepper along with cocoa and vanilla to flavor their favorite chocolate drink.
The rich taste is reminiscent of several other spices at the same time: pepper, cinnamon, nutmeg and cloves. That is why this spice is also called the four spice or the all-spice.
They give a round and harmonious note when mixed with pepper or added to pepper mixtures. Allspice berries can also be used to make a fragrant potpourri. Allspice is used to flavor foods such as:
- sauces, spices, curries and chutney and other dishes.
- It is used as a warming ingredient in food and wine.
- It is used to flavor sausages and pickles.
Allspice is very suitable as a curing spice especially for fish, cucumbers and mixed pickles and also sauerkraut are good examples of the use of allspice. But marinades, stews and soup can also be seasoned very well with allspice.
With its warm and spicy aroma, allspice fits well into spice mixes for mulled wine and punch.
